Rhubard & Custard Cake
Ingredients:
For the Rhubarb Curls: - 2 Sticks of Rhubarb - Pink/Red Food Colouring - Juice of 1 Lemon - 1 Tablespoon Caster/Granulated Sugar For the Roasted Rhubarb: - 600g pink rhubarb trimmed and chopped into 3cm pieces - 80g plus 1 tablespoon caster/granulated sugar - 1 teaspoon vanilla extract/vanilla powder For the cake

Rhubarb Curls - PREPARE OVERNIGHT
Trim off the ends of the rhubarb and using a peeler, start at the top of the rhubarb and peel long thin strips of the first layer of coloured rhubarb. Place in a large pan and add enough water to completely immerse them, along with the lemon juice, sugar and a few drops of food colouring.

Rhubarb Curls
Simmer for 2-3 minutes until the rhubarb is soft. Place the rhubarb on a baking sheet lined with parchment paper and twist into curled shapes. Leave in a warm place overnight to fully dry out and crisp. Make sure to ensure you are careful when peeling these curls away from the parchment paper as they are very fragile.

Roasted Rhubarb
Preheat your oven to 180'C (350'F) Gas 4. With the remaining rhubarb, cut into 3cm pieces and bake in an ovenproof dish with the sugar, 1 tablespoon of water and the vanilla. Bake for 20-25 minutes. Once cooked, leave to cool.

Place the mixture into 2 tins and bake for 25-30 minutes until the cake is golden brown and comes out clean when a skewer is inserted into the centre.
